Sujihiki knife for slicing, produced by Miyabi, with blade of 24 cm, shock-resistant.
Features:
- Symmetrical blade is made from ultra-hard FC61 steel and covered in 48 layers of stainless steel;
- Ultra-sharp Honbazuke blade (individually sharpened by a Japanese master craftsman to achieve the characteristic sharp edge of Japanese knives);
- The knife's blade is extended in the handle in the traditional “D-handle” way for perfect balance and ergonomic use;
- The blade is cryogenically treated through FRIODUR® at -196 °C, which guarantees very high hardness;
- Handle made from Pakka wood.
For optimal sharpening and polishing results of the knives from the Miyabi range 5000FCD, we recommend using the sharpening stones from the same brand.
