Sujihiki knife from the Miyabi brand with blade of 24 cm, corrosion and shock resistant, ideal for cutting and slicing meat and fish.
Miyabi blends the traditional with innovative techniques bringing Japanese tradition to life, each knife featuring a hand-finished blade with katana-like edge, an homage to samurai swords made centuries ago.
Features:
- The knife blade is made from 3 layers;
- The core of the blade contains MicroCarbide MC63 steel powder embedded in 2 layers of steel, it provides a hardness of approx. 63 Rockwell (the International Standard Unit of Hardness Measurement);
- Blade cryogenically treated through CRYODUR® at -196°C, which also guarantees very high hardness;
- Genuine Japanese Tsuchime (finished by hammer) blade with a symmetrical 19° angle;
Each blade is hand-finished according to the traditional Honbazuke method which ensures maximum cutting precision;
- The handle made from Pakka wood offers stability and perfect balance regardless of the cutting technique used.
