- Symmetrical blade made from ultra-hard MicroCarbide FC61 steel coated in 48 layers of stainless steel;
- Ultra-sharp Honbazuke blade (individually sharpened by a Japanese master craftsman to achieve the characteristic sharpness of the Japanese knives);
- Knife blade extended in the traditional “D-handle” for perfect balance and ergonomic use;
- The blade is cryogenically treated through FRIODUR® at -196 °C, which also guarantees very high hardness;
- Handle made from Pakka wood;
- Rockwell hardness of approximately 61;
- Recommended to wash only by hand;
- Handmade in Seki, Japan.
