Santoku knife - Japanese chef's knife - produced by Miyabi, with blade of 18 cm, shock-resistant.
Features:
- Symmetrical blade made from ultra-hard MicroCarbide FC61 steel coated in 48 layers of stainless steel;
- Ultra-sharp Honbazuke blade (individually sharpened by a Japanese master craftsman to achieve the characteristic sharp edge of Japanese knives);
- Knife blade extended in the traditional “D-handle” way for perfect balance and ergonomic use;
- The blade is cryogenically hardened through FRIODUR® at -196 °C, which guarantees very high hardness;
- Handle made from Pakka wood.
For optimal sharpening and polishing results of the knives from the Miyabi 5000FCD range, we recommend the use of sharpening stones from the same brand.
