The Miyabi 5000MCD Rocking Santoku knife is sure to delight any enthusiast of Japanese knives. Its blade has been sharpened using the traditional Japanese Honbazuke method, resulting in a symmetric edge with a sharpening angle of 10 degrees. The Rocking Santoku knife is versatile, allowing you to cut both vegetables and fruits as well as meat or fish.
The core of the blade - made from MicroCarbide MC63 steel - is surrounded by an additional 100 layers. This creates a unique Damascus pattern for each knife. The CRYODUR® blades, ice-hardened, provide exceptional cutting performance, corrosion resistance, and optimal blade flexibility. The ergonomic handle made from Masur birch wood guarantees optimal knife control and intensive use without fatigue.
