Model 312 incorporates the state-of-art technology developed by Chef's Choice® based on microns sized diamonds for the ultra-sharpening of knife blades in two sharpening / grinding stages, one with fine abrasive diamond and the other with ultra-fine diamond.
The two-stage sharpening design of Model 312 allows for sharpening of the first edge with fine diamonds to create a first angle, before sharpening with ultra-fine diamonds, and, in Stage 2, at a slightly wider angle, so as to create a extremely sharp and durable blade. Diamonds, the hardest known material, can sharpen knives made of any type of metal, including of the top hardest carbon, stainless steels and super alloys.
Model 312 can be used to sharpen various metal blades at 20˚ angle, whether they are chef's knives, slicing knives, bread knives, or Santoku knives. The device can also be used to sharpen serrated blades of all kinds, but using exclusively Stage 2 which will sharpen the teeth and will develop sharp microblades along the edge of those teeth.
Model 312 is designed to sharpen domestic use knives, pocket knives and certain sports knives. Do not attempt to introduce in view of sharpening scissors, ax blades or any blades that do not fit freely into the slots.
Always make sure that the knife blade is thoroughly cleaned before sharpening.
During the sharpening process in Stage 1, the fine diamond conical discs create microgrooves along the facets on each side of the blade, creating the first conical angle of the edge.
In Stage 2, the precision discs, coated with micron sized diamonds, lightly grind and polish the facets adjacent to the blade, creating a microfacet along a straight, polished edge of microscopic thickness. The grinding action polishes and will sharpen simultaneously the limits of those microgrooves created by the abrasive diamonds in Stage 1, adjacent to the edge, until they become sharp microgrooves that will help the cutting action.
The complete sharpening process for a 20 cm blade knife takes about 2 minutes, and for knives with shorter or longer blades, it can take more or less time. Once the knives have been sharpened using the Model 312, resharpening takes less than 1 minute.
The device is precise and safe, each sharpening slot being fitted with flexible springs above the sharpening discs to keep the knife blade safe from incorrect guides.
The sharpener will be maintained only by manual cleaning with damp cloth.
