Diamond Hone® Model 270 Knife Sharpener combines advanced electric and manual sharpening techniques to create an exceptionally efficient blade for almost any knife. The cutting edge of the knife is finely shaped for extreme sharpness, but it retains its strong microscopic teeth which gives it a very effective "bite" for all your food preparation needs and especially for fibrous materials.
Model 270 is designed to sharpen at 20° angle American, European and Asian style domestic use knives (two-sided, such as Santoku), pocket knives and certain hunting knives or those used in hiking. Do not attempt to sharpen scissors, ax blades or any blades that do not fit directly into the slots. NOT recommended for ceramic knives and Asian-style knives that have one-edge blade.
Model 270 has 3 sharpening stages, the first 2 stages performed with the help of a motor, followed by the modeling stage, which is entirely manual and allows a precise sharpening, which will be done depending on the knife purpose. Each sharpening stage has a precise role and must be carried out properly, so that the knife blade be well sharpened, shaped and ground.
In Stage 1 (sharpening), sharpening is done with the help of an electric motor through two slots (left, right) which help create the facets with primary edges, formed at a nominal 20 degrees on each side of the edge, which leads to an overall 40-degree edge and to the occurence of metal burr.
In Stage 2 (modeling), a similar process is repeated, but the two slots are fitted with much finer abrasive diamonds and sharpening is done at a slightly higher angle to shape a second edge on the blade. This process gives much longer durability to the blade.
In Stage 3 (finishing), the blade will be slightly smoothened, creating a perfectly sharp and extremely durable Trizor-type edge. This stage, unlike the first two ones, is done in a single sharpening slot, the blade being finished simultaneously on both sides.
Always make sure that the knife blade has been thoroughly cleaned before starting the sharpening process. Serrated blades shall be sharpened only in stage 3.
The complete sharpening process for a 20-cm blade knife takes about 2 minutes, and for knives with shorter or longer blades, the duration of the sharpening process can be longer or shorter. Once the knives have been sharpened using Model 270, resharpening takes less than 30 seconds.
The sharpener shall be maintained only by manual cleaning with a damp cloth.
