The walls of the wok pan are formed, starting from the inside, of an external layer of stainless steel 18/10 Cr-Ni (chromium-nickel), 2 internal layers of pure aluminum, which include a thick internal middle layer of aluminum alloy, and 3 layers of Triplinduc® special alloys.
TriplInduc® is a unique combination of 3 alloys that allows you to easily switch from a gas stove (or any other type of stove) to induction or vice versa. Moreover, TriplInduc® offers up to 30% more induction efficiency and guarantees that the base will remain flat, even after many years of use.
This product can be used on all types of hobs. Do not use inside the microwave.
7ply technology
The Demeyere wok pans use the 7ply technology: consisting of a 2.3 mm thick base with an aluminum core. The special technology of manufacturing these wok pans makes it possible to obtain a high temperature at the base of the wok pan but a somewhat lower temperature on its edges, perfect for the "stir-fry" cooking method.
The non-stick layer is not required
Using the 7ply technology and a correct thickness of the material results in optimal heat distribution, thus reducing the chances of burning your wok pan. A non-stick layer is not required. You can use sharp objects when cutting and stirring ingredients.
Durable and hygienic products
All wok pans from Demeyere are made of 18/10 stainless steel and the surface is finished using the SILVINOX® technology, thus minimizing the risk of discolouration or corrosion. Stainless steel welded handles prevent the accumulation of filth or food remnants thus guaranteeing a hygienic cooking process.
Maximum efficiency on all types of hobs
Wok pans can be used on all types of hobs, including induction hobs. Using the unique Triplinduc® technology, you can change the heat source at any time without compromising efficiency.
Flat-bottomed wok pans
In addition to the wok pans with round base, Demeyere has also developed flat-bottomed wok pans that are easy to use on any type of hob even without a separate wok ring. This design is very practical when using an induction hob.
About wok pans
Many people consider the Chinese cuisine to be the best in the world. This cuisine is certainly the oldest, the most complete and the most sophisticated one, with a tradition that takes us back in time, more than 3000 years ago. Cooking the ingredients is a very important stage, being performed quickly and with very few fluids. The results are very tasty but also very rich from the nutritional point of view.
The technique of stirring and quickly toppling the ingredients in very little oil, in a very hot cooking pan, is called "stir-frying" or the "chao" or "chow" method as the Chinese call it. This technique is used when you are cooking vegetables, poultry meat or fish.
The wok pans are relatively thin, with a semi-circular shape with an upper diameter of 25-40 cm and are used in most Asian countries. They are also called Wayan, Karachi or Kuali. They are usually made of steel, cast iron, aluminum (with or without a non-stick coating) or stainless steel. All these materials provide more or less good results and always have one or more disadvantages. The modern wok pans from Demeyere were designed to mitigate all these disadvantages of other materials while meeting the highest expectations.
