If you want an elegant and fine dessert straight from French cuisine, you could try the delicate Joconde biscuit top. This particular type of biscuit is, in fact, a fluffy sponge cake, but very thin and very flavoured thanks to the almond flour that is required in its preparation. The name Joconde, of course, comes from Leonardo da Vinci's famous Mona Lisa. This type of top is used for preparing the Opera cake, an emblem of the French confectionery.
The frame is 3-mm high, this being the ideal height to create the delicate biscuit top. The material is a type of high-quality stainless steel that does not oxidize when exposed to low temperatures. The frame is 4-mm thick which confers the product optimum resistance to deformations.
However, the frame is very flexible to easily remove the biscuits from its grasp and, moreover, it returns to its original shape.
The frame can be inserted without problems in refrigerator or freezer and in the traditional oven. The set can also be cleaned in dishwasher.
