De Buyer grill pan, diameter 30 cm, height 4.5 cm, made of carbon steel with a thickness of 2.5 mm that does not deform.
The carbon steel pan is ideal for preparing meat or fish. The pan heats up quickly and allows the Millard reaction.
* The Millard reaction occurs once the temperature of the pan exceeds 140°C, the temperature that allows food to be sealed on the surface, resulting in the caramelization of natural juices. A crust forms that prevents evaporation, and the food acquires a brown color, forming a crust on the surface, while the food is tender and soft inside.
The "Lyonnaise" profile of the pan, with inclined and rounded sides, which do not have sharp angles, allows the easy transfer of the dish from the pan to the plate or dish in which it will be served.
The very resistant handle, in french style, is made of steel and fastened with 3 very solid rivets.
It can be used on all types of hobs, including induction ones.
Tip: to keep the natural non-stick properties, do not use detergents and do not clean the pan in the dishwasher. Before the first use, the pan must be seasoned, in order to obtain natural non-stick characteristics.
Note: As it is used, it is normal for the pan to change its color (it will darken), in an uneven way. This reaction is normal and ensures the development of the natural non-stick properties of the carbon steel pan.
